Marysabel Caballero and Moises Herrera are 2nd and 3rd generation farmers respectively and are highly regarded in specialty coffee in Honduras. Their family business has almost 200 hectares of land which contains 17 different farms. The Caballeros are extremely committed to the environmental sustainability of their farms. A lot of their energy and focus goes towards improving the soil of their farms to ensure a healthy growing environment for their shrubs. They produce organic fertiliser made from manure, pulp from the coffee cherries and other organic material which is used in addition to some mineral fertiliser to ensure that the coffee plants get the nutrients. Oranges, avocados, flowers, bananas and other fruits are also grown at the farms, but mainly for the pickers to eat and to create biodiversity at the farms that ensures good growing conditions and shade for the coffee trees.

Marysabel believes that the coffee will never be any better than at the point it is picked, and that from that point on the job is to maintain quality rather than improve it. It is for this reason that pickers are well trained to ensure only the best ripe cherries are harvested, the quality and consistency of picking on Caballero farms is some of the best we’ve seen. We recently visited Marysabel and Moises, the first time we’d been able to since 2019. Our intention is to visit them annually, it is in fact our goal is to visit each of our Unit Fourteen producers every year.
