In western Huila, near the town of La Plata, Jeisson Fabian Ortiz is part of a new generation of Colombian coffee producers shaping the region’s future. Jeisson has only been growing coffee for 4 years, but is quickly gaining attention for care and precision at his farm Finca Buenavista. At 1860 masl, he has 4 hectares dedicated to coffee production, and 2 for avocado trees, and employs 3 permanent staff, with up to 12 seasonal pickers.
Huila is a powerhouse of Colombian arabica coffee production, and La Plata is a big part of that reputation. La Plata is a landscape of smallholders, farming coffee on tiny family-run plots at impressive altitudes - approximately 80% of coffee production in this region is from farms of less than 3 hectares. This size affords producers like Jeisson the agility to manage exciting varietals, like this beautiful Pink Bourbon, prized for its high sweetness, floral aromatics, and elegant acidity, alongside his other trees of Castillo and Catimor. This coffee was picked when it reaches the optimal peachy pink colour characteristic of this varietal, depulped and dry fermented twice in stainless steel tanks before being thoroughly rinsed. It was then dried, first in a solar dryer and then mechanically until it reaches the optimum moisture content.
