

PSitting at 1616 masl, and spanning 10 picturesque acres, Alfredo Rojas’ farm is found in Garzon in Huila, southwest Colombia. This coffee was manually harvested and floated to sort for density. The lot was then fermented in tanks underwater before being pulped and dried in a parabolic dryer, similar to a greenhouse.


Known for its ideal climate, topography and fertile soils, Huila is a coffee-growing powerhouse. There is a significant history of coffee farming in this department, and this inherited, shared expertise has long produced soughtafter coffees. This coffee was sourced through Coocentral, whose focus is to enhance the livelihoods of the farmers and the quality of their crops. They work with around 2000 farmers, and have invested nearly 3 million USD in social projects. Through working with local cooperatives such as this one, we are gaining access to really beautiful microlots from smaller producers and more remote farms.
