Luz Helena grew up in Armenia, and has been growing coffee there for 20 years. Inspired by her husband Jairo Arcila’s work on coffee farms and as a dry mill manager, Luz Helena has focussed the last few years on elevating her coffee to speciality levels and has set about renovating and refining her farm practices. Through this honing of her expertise, she has developed an obsession with quality and a fascination with processing. Her children Carlos and Filipe inherited this passion, and the pair now head up Cofinet - a company sourcing, producing and exporting the finest coffees with traceability and sustainability at its heart.
These coffee cherries were harvested following strict ripeness criteria, before being floated for density and hand sorted. A 30 hour underwater fermentation followed before the coffee was pulped and carefully dried. The resulting coffee is fruity and rich, and is a testament to Luz Helena’s work.
