The Aquiares Estate sits on the fertile slopes of the Turrialba Volcano, where coffee has been cultivated for more than a century. Translating from the indigenous Huetar language as ‘land between rivers’, the estate spans 600 acres, and is home to a thriving community of workers and their families. Diego Robelo is at the helm, leading with innovation and passion, following in his father Alfonso’s footsteps. Aquiares is carbon neutral, renowned for regenerative agriculture, and at the forefront of new varietal cultivation.

This lot is the Centroamericano variety, a hybrid developed to preserve exceptional cup quality with improved resilience to coffee leaf rust. For this red honey process, the skin and pulp are removed from the cherry but the sticky, sugary mucilage is left intact while the coffee is dried, typically for 18-24 days. These sugars impart sweetness, body and ripe fruit character, and the descriptor ‘red’ alludes to the colour the coffee turns as it dries. Finally, the coffee is milled to remove the mucilage and parchment. Aquiares is a firm favourite at Round Hill, and we have been buying Diego’s coffees for years. Our Head of Coffee Pandora was lucky enough to visit the estate earlier this year, and we are so excited to continue our relationship with this exceptional farm.
