Eduar Gaviria owns and manages his picturesque farm La Villa, found at 1670 masl in the mountains of Acevedo, southern Huila. He began his coffee career when his father gifted him 2 hectares of land, and he has subsequently expanded his farm to sit across 5 hectares. Driven by a commitment to quality, Eduar is fascinated with how altitude, soil composition and climate shape the flavour in his coffees. He has quickly gained attention in the specialty coffee world, achieving remarkable results.

For this coffee, ripe cherries were hand-picked, then fermented in sealed tanks to develop their distinctive anaerobic profile, before being slowly dried on patios. The Papayo varietal, so-called due to the cherry’s resemblance to a papaya fruit, is gaining increasing attention as a newly identified variety and is thought to be a possible mutation of Pink Bourbon. Our import partners Nordic Approach discovered La Villa’s coffees through Cuatro Vientos, a family-run exporter founded in 2018 by Yonatan Gonzalez, a third-generation coffee producer. Operating across Huila’s diverse regions, Cuatro Vientos was established to connect smallholders like Eduar with importers and roasters who value traceability and craftsmanship. Their approach celebrates regional character in microlots, while supporting sustainable livelihoods for producers and innovative farming methods.
