Francisco Morales Francisco Morales

Francisco Morales is the proud owner of La Esperanza farm in Cipresales, which he and his wife established over 40 years ago. Thanks to decades of hard work and dedication, La Esperanza - ‘The Hope’ - now supports their family and many local employees, producing around 17 tonnes of coffee annually. We are thrilled to have Francisco’s coffee back in the roastery this season.

Francisco is constantly looking for ways to improve his farm and refine his approach to coffee production. An active member of the Huehuetenango coffee community, he has received several awards in the Huehuetenango Highland competitions in recognition of the quality of his coffees. Today, his son Elmer oversees the coffee processing on the farm, including this natural lot. Fully ripe cherries were harvested, floated to sort by density, and then carried to the drying beds located behind the family home. There, they were dried under shade nets for 12-15 days. Elmer has built a 3-tier drying structure, and he regularly rotates the coffee between levels as well as frequently turning the beans, to ensure even drying and consistency while encouraging greater flavour development.
