Los Luchadores brings together Pacamara cherries from 2 of the Salaverria family's farms, Villa Guadalupe and San Francisco, located on the sandy loam slopes of the Santa Ana volcano in El Salvador at 1400-1650 masl. The Salaverrias are 6th-generation coffee producers, with José Antonio working alongside his sons, José Antonio Jr and Andrés. The name ‘Los Luchadores' translates as 'The Fighters' - a tribute to the dedication and effort of their team, recognising the skill and innovation required to produce exceptional lots year after year.
The family has several coffee production areas, and harvests are separated by lot, altitude, varietal, quality potential and growing conditions. Smaller farms are utilised for experimental coffees, and more recently they have been exploring fermentation and soaking, aided by their wet and dry mill, Beneficio Las Cruces. The long-term health of both their land and workforce are of huge importance. José Antonio has dedicated the past decade to soil regeneration; he founded a factory to produce organic fertilisers to strengthen trees against leaf rust, with an added incentive of improving cup quality. Permanent employment, housing, substantial bonuses, healthcare and education initiatives support their workforce and the surrounding communities.
