In the hills of Cabo Verde, the Henrique family has long been a corner- stone of specialty coffee. Their story traces back to 1965, when Thiago Henrique’s grandfather planted the first coffee plots in the area. The land is now in the hands of Thiago and his father Adriano, who proudly continue the family legacy of agricultural innovation and quality driven production. Their approach is underscored by a deep respect for the land they inherited, and they are constantly striving to create a sustainable, symbiotic partnership between coffee cultivation and the environment.
Inspired by his heritage, Thiago pursued a degree in Agronomy in order to enhance his hands-on expertise with a modern academic understanding. His education resulted in an obsession with advancing fermentation techniques, and this manifested in a state of the art central processing station at the farm. Here, Thiago is able to meticulously control and experiment with every stage of fermentation and processing. The unit is equipped with washers, pulping machines, anaerobic fermentation tanks, patios, suspended drying beds, rotary dryers and a dedicated space for dry milling. This coffee is the result of Thiago’s devotion to excellence; a blend of tradition, innovation, and respect for the soil that has shaped his family’s story for generations.
