Nestled in the gentle, rolling hills of Minas Gerais, Sítio Maranhão is home to brothers Josiel and Jeferson Betti and their wives Jessica and Cleissimara. The brothers oversee the harvest and cherry selection, with Jessica and Cleissimara heading up the careful post-harvest stages. This is our second year buying coffee from this inspiring family - their shared precision results in a consistently high level of quality across their harvest, a testament to their passion and unwavering attention to detail.
The Betti family have an exceptional reputation and their coffees are highly sought-after, despite only producing around 300 bags of green coffee annually. They combine innovation with sustainability - utilising natural fertilisers, reducing water consumption, and reforesting their land to protect local wildlife. Their ongoing experiments with fermentation and flavour development have been extremely encouraging, and this extended fermentation lot is one of the first available at any volume. This naturally processed coffee underwent an extended 72-hour fermentation in tanks before being sun-dried on patios. The Yellow Catuai varietal is known for its bright sweetness and gentle acidity - its yellow hue signifies a slower maturation due to reduced absorption of sunlight, resulting in developed sugars and flavour complexity.
